This person can not handle real world problems and has a melt down over the tiniest of issues. Pringles are originally a brand of potato chips that comes in a tube and has many different flavors. This person crumbles as easily as a single pringle, hence the name. It's not strictly political and can be used on any one who is too sensitive or feels they must be sheltered from everything.
