"Glossy Taco" is a term created by 'holosexuals', fans and subscribers of Simply Nailogical (Christine). Her viewers always misheard "glossy top coat" for "glossy taco". Since then Christine has stuck to that term to refer to a glossy top coat.

After I buff the holo, I'll add a "glossy taco" to seal it up.
