Coahuila Mexico

Coahuila Mexico - 1 of the 32 states of Mexico , Coahuila borders the Mexican states of Nuevo León to the east, Zacatecas to the south, Durango & Chihuahua to the west. To the north of Coahuila there is Mexico–United States border, adjacent to the U.S. state of Texas along the course of the Rio Grande (Río Bravo del Norte). It comprises 38 municipalities .

The largest city & State Capital is the city of Saltillo; the 2nd largest is Torreón (largest metropolitan area in Coahuila & 9th largest in Mexico); the 3rd largest is Monclova (a former state capital); the 4th largest is Ciudad Acuña & the 5th largest is Piedras Negras.

Coahuila is largely arid or semi-arid, but the rivers of the State support extensive irrigated agriculture, particularly cotton. The Parras district in the southern part of the State produces wines & brandies. The pine-oak forests of the Sierra Madre produce timber.

The portion of the State west of the Sierra Madre Oriental lies on the Mexican Plateau, is part of the Chihuahuan Desert.

Coahuila is 1 of Mexico's major steel & wine producers
& is ran by the Los Zetas Cartel.
Coahuila Mexico , About 95% of Mexico's coal reserves are found in Coahuila, which is the country's top mining state.

Saltillo & the Southeast region have one of the largest automobile industry in the Mexico & the major industry in the state, hosting companies such as General Motors & Chrysler assembly plants.

Foods they are known for are

As in other northern Mexican states, Coahuila's dishes consist of beef, veal, lamb or goat. Tacos, marinated flank meat, beef jerky, fritadas (goat in its juice) and machaca (beef jerky with scrambled eggs.

Cabrito al horno -- baked goat

Machaca con huevo -- dried, salted beef that is rehydrated, lightly roasted over fire, soaked in water to remove the salt and to soften, then pounded to pieces, traditionally over a mesquite trunk, by a mesquite pole. Then it's put in water again to get out more salt, & finally squeezed & fried in a skillet. A salsa is made with onion, chili, tomato & oregano, the salsa is mixed into the fried beef & the whole thing is cooked for about 5 minutes. Most people expect to eat this with wheat tortillas, beans and coffee. This particular machaca also contains eggs

Cajeta de membrillo & Cajeta de perón -- traditional cajetas are typically gelatin-based deserts congealed in a round box 4 or 5 inches across, made of thin wood slivers. Membrillo is quince, & perón is a pearlike fruit .

Colima Mexico

Colima Mexico - state & city same name, Colima. is a tiny state of western Mexico on the central Pacific coast, includes the 4 oceanic Revillagigedo Islands. Mainland Colima shares borders with the states of Jalisco & Michoacán. In addition to the capital city of Colima, the main cities are Manzanillo & Tecomán.

Colima's main crops are 🍋, melons, 🥭, papaya, 🍉, yellow seedless 🍉 & 🍌. Other crops include 🌽, sugar cane, jalapeno chilies, 🍒 🍅& 🥒.

Pozole Seco - dry white pozole, which has practically no broth topped with 🥓, 🥬, 🧅 , radish.

Menudo - cow guts (tripe) soup

Chamorro-

Slow cooked pork leg served in a spicy sauce.

Atole -
A drink made with 🌽 with a bit of vanilla & cinnamon.

Tejuino -
fermented 🌽, molasses, cinnamon, 🧂& lime over crushed ice

Tuba -

alcoholic drink uses sap from 🥥 palm trees are fermented then topped with toasted 🥜.

Tuxca -
An alcoholic drink that ferments sap from local agave plants.
Colima Mexico has 1 of highest murder rate per capita & 1 of the highest crime rates, due to its ports being a contested area for cartels and cartel activities.

It is the 4th smallest federal entity after Tlaxcala, Morelos & the Federal District of Mexico City, containing only 0.3% of the country's total territory. The state is in the middle of Mexico's Pacific coast, bordered by the Pacific Ocean & the states of Jalisco & Michoacán.

Colima cartel has become a branch of the Sinaloa Cartel as are the Milenio Cartel, Guadalajara Cartel, & Sonora Cartels.

Colima marks the latest manifestation of violence in one of Mexico’s smallest yet deadliest states — a dubious honor attributable to Colima’s location along the territorial fault lines dividing Mexico’s most powerful cartels.

Aguascalientes Mexico

Aguascalientes Mexico - 1 of the 32 states which comprise the Federal Entities of Mexico. located in the northern part of the Bajío region, in north-central Mexico,

It is bordered by Zacatecas to the north, east & west, with Jalisco to the south..

Aguascalientes Mexico.... Its name means "hot waters"

& originated from the abundance of hot springs originally found in the area.

Aguascalientes was historically known for its former railroad textile industry, as well as wine making,🍇🍷🍾

Aguascalientes is also well known for its San Marcos Fair (Feria Nacional de San Marcos), the largest fair in Mexico & 1 of the largest in Latin America.

Querétaro Mexico

Querétaro Mexico - 1 of the 32 federal entities of Mexico. It is divided into 18 municipalities. Its capital city is Santiago de Querétaro. It is located in north-central Mexico, in a region known as Bajío. It is bordered by the states of San Luis Potosí to the north, Guanajuato to the west, Hidalgo to the east, México state to the southeast & Michoacán to the southwest.

Enchiladas Queretanas - enchilada filled with chicken and coated in guajillo sauce. The enchiladas are then served with stewed potatoes & carrots, fresh salad, cotija cheese.

Sonora Mexico - is one of the 31 states along with Mexico City, comprise

Other large cities include Obregón, Nogales (on the Mexico-United States border), San Luis Río Colorado, and Navojoa.

Sonora is bordered by the MEX states of Chihuahua to the east, Baja California to the northwest and Sinaloa to the south. To the north the U.S.–Mex border with the USA states of Arizona & New Mexico, & on the west the Gulf of California.

They have their own Sonora drug cartel & rival Caborca Cartel.

The Sonoran diet Usual is carne asada / beef & flour or corn tortillas .

Sonoran Shredded Beef Tacos . Beef That is simmered in a delicious sauce of onion, garlic, spices, tomato & beef . It is then shredded and served on corn tortillas with Mexico Chile Sauce.Sonora beef is made with brisket,simmered for 4 hours in beef stock and water along with dried & fresh chilies, garlic, celery & onions.

Sonoran-style flour tortillas are stretched paper thin & cooked on a griddle with small blisters that give them a smoky flavor.

The Sonoran Hot Dog a hot dog wrapped in bacon, grilled, and served on a roll topped with beans, tomato, onions, jalapenos, cheese, mayo, & mustard. It originated in Hermosillo, the capital of Sonora, and is readily available in Phoenix and Tucson Arizona.

Machaca Burrito, is made with shredded beef, eggs, onions, tomato, bell peppers and spices, all wrapped in a warm flour tortilla. Bacanora is their state’s version of tequila.
Sonora Mexico is home to 8 indigenous groups: Mayos, Yaquis, Pimas, Guarijíos, Series, Pápagos, Cucapá, Kika and is located northwestern Mexico.

main attractions are its beaches and its magnificent desert, Sonora is also a land of vast cattle ranches and thus beef is a big staple food.

Chihuahua Mexico

Chihuahua Mexico - located in the north-west part of Mexico and bordered by the states of Sonora to the west, Sinaloa to the southwest, Durango to the south, and Coahuila to the east. To the north and northeast, it shares a border with the USA States of New Mexico & Texas. Its capital city is Chihuahua City the largest city is Juárez. And Cuauhtémoc.

the state's big attraction, Las Barrancas del Cobre/ Copper Canyon, larger and deeper than the Grand Canyon of Arizona.

Chihuahua serves as an important route prospering from billions of money from international trade of NAFTA. But the state suffers activities from drug cartels.

Popular foods are Enchiladas coloniales a Mexican dish originating from Chihuahua.

Tesguino a beer made from malted corn that Tarahumara, a tribe from the Sierra Madre valleys ,This drink is strained and should be enjoyed immediately.

Empanadas de Santa Rita , empanadas enjoyed on may 22nd.

Sotol is a Mexican spirit distilled from a group of plants of the Dasylirion , aka desert spoon. Sotol a close relative to tequila & mezcal.

The drink is made by roasting, fermenting & then distilling piña—the center of the plant. It has a smoky character similar to mezcal. The flavor is smooth & mellow & the drink has a warm finish.

Chile pasilla con queso is a Mexican chili pepper-based dish .

Queso Chihuahua is a Mexican cheese made from cow's milk. aka Menonita, referring to the Mennonite community in Chihuahua that first produced it.
Chihuahua Mexico is primarily identified with its namesake, the Chihuahuan Desert, it has more forests than any other state in Mexico, aside from Durango, Due to its variant climate, the state has a large variety of fauna and flora.

The state is mostly characterized by rugged mountainous terrain and wide river valleys.

Durango Mexico

Durango Mexico - Durango is Mexican state landlocked by sinaloa to the west , Chihuahua to the north, Coahuila to the north east , Zacatecas to the south East,Nayarit to the south west .

Durango is a rural sparsely populated state, most common animal is the scorpion. Durango is Known for their Leatherwork includes bags, wallets, belts, cigarette cases, briefcases, books & saddles.

Mexico northwest of the Central Mexican Plateau, where it meets the Sierra Madre Occidental—the highest peaks in the state.

The Sierra Madre Occidental blocks moisture from the Pacific Ocean, impacting the local climate of the state. Las Quebradas region, located over the mountain chain and on the northwest of the state, has a humid subtropical climate.

The rest of the state has semi-arid and temperate climates. It is hot & dry in the East, with some temperate areas existing at higher elevations Most of the state is mountainous and heavily forested.
